How we make coffee

The journey of coffee begins long before you meet it at the shop.

This way starts in Colombia and Dominican Republic and lasts at least one year. We grow the best types of coffee on our plantations - Arabica and Robusta. Each of these varieties plays an important role in coffee blends.

 

Arabica gifts coffee rich flavor

 

Robusta is a source of caffeine and coffee strength

Despite the fact that the so-called "coffee belt" is located within the tropics, Arabica does not like heat and requires abundant rainfall. Therefore, for life, it chooses mountain areas at the altitude of 900 meters to two kilometers.

Robusta is much less high maintenance and its plantations begin at a height of two hundred meters.

Selected seedlings of both varieties receive year-round care necessary for the best coffee beans to ripen.

 

Ripening

 
 

During its second year of life, the coffee tree starts to give coffee cherries with two beans inside - the essence of the future drink

 

Each tree produces from one to three kilograms of coffee beans per year. It takes 9-11 months for the cherries to ripen. They turn red and are ready to continue their journey.

The quality of coffee depends on not only its variety, soil and care, but also on the way it is harvested and processed. We do it by hand since only ripe fruits are suitable for the best coffee.

 

Selecting the best beans

 
 
 

Harvested berries have their pulp removed. There are two ways of processing – wet and dry. The first one is when the bean covering is washed off with water in a special machine.

 

With the dry method, the fruits are being dried under the sun for 15-20 days and are constantly being turned over - twenty times on the first day and eight times during the following days.

It is believed that dry processing better preserves useful properties, taste and coffee flavor, which is why we apply it in “Moscow Coffee House”.

 

After drying, the remaining thin covering is peeled off beans with a special device.

All we have to do now is to sort them by size - the large ones are considered the most valuable. And after that, we remove random debris and low-quality beans

After that, coffee is poured into 60 kg bags with a large marking "Moscow Coffee House ltd." and sent to Moscow suburbs.

 
 

Roasting

 

After such long journey coffee beans are delivered to the plant, where they are roasted properly and they turn to familiar dark brown color.

In roasters - modern coffee roasting machines – beans exsiccate at temperatures above 200 ° C, expand twice their size and their typical wrinkle deepens in the middle.
In order to process it uniformly, we use rotating device to roast the beans. The taste of drink directly depends on roasting degree: light roasting leaves sourness in the coffee, while dark roasting makes the taste richer and enhances its flavor.

Grinding

 

Roasted beans are sent for grounding in industrial coffee grinders. The grind size is selected depending on the way of coffee preparation.

Coarse grind is suitable for French presses and drip coffee machines

 

Finer grind is ideal for espresso machines.

 

Very fine is suitable for preparing "oriental coffee" – in Turkish coffee pot cezve or for brewing in a cup.

Production
of instant coffee
and drying

 

Part of ground coffee continues its journey through the production process of “Moskovskaya cofeinya na payah” and embarks to be processed into instant coffee.

 
To obtain traditional instant coffee, ground beans are poured with hot water and brewed. After that, we evaporate it on special units and obtain concentrated extract, which is then converted into granules.
For the production of freeze-dried coffee, we freeze evaporated extract and remove remaining water using vacuum. This process is longer and more complicated, but this way coffee retains even more nutrients and flavors.
